I'm curious about this so I want to see if we can put together a list.
Have read the books Kit Harington Emilia Clarke Finn Jones (1-4) Sophie Turner (only Sansa chapters) Ian McElhinney Nikolaj Coster-Waldau Richard Madden
Have not read the books Lena Headey Peter Dinklage Charles Dance Maisie Williams
Any more?

I didn't know NCW had read the books. BTW maybe Lena and Maisie should have their own subcategory because their mums read the books for them.

Aidan Gillen has read them. Due to the adult content, Nikolaj had his mum read them.

NCW didn't read them at the time of Comic Con 2013, but maybe he has since, haven't seen his recent interviews I'm sure Stephen didn't read them

He actually reads a lot but I don't think ASOIAF is his type of series, especially given it's 5 books and the series is unfinished

Keisha Castle-Hughes read them before the show even existed.

Really? I thought he did because there is a photo of him having signed a page in Dance With Dragons that is Jon's final page of his final chapter and he wrote "Uh-oh!" But maybe he didn't and just knows what happens with the character in the book. I don't know if Natalie Dormer has read them, I know she mentioned in an interview that D&D told her it was not necessary for her to read them because their Margaery was going to be different than the book version but it would be her choice if she read them or not. NCW did joke that he had his Mom read them to him but he also said that he skims through the books for Jaime related stuff.

Yeah I saw a couple Season 5 interviews with him where he said he hadn't read ADwD yet.

Yeah I saw a couple Season 5 interviews with him where he said he hadn't read ADwD yet. Thank you @jackbauer24! I did not know he had said that, I just remember Richard Madden teasing him about reading them so fast and complaining about having nothing to read, but that was probably before book 5 came out. And I miss Clive Russell on this show...

I know Joe Dempsie (Gendry) didn't read them, but has a friend that does and tells him everything. I'm pretty sure Isaac Hempstead Wright hasn't read them either.

Ellie Kendrick has at least read the parts that Meera is in. Natalie Tena and Jessica Henwick have read all of them, I believe Jessica read them before being cast.
And I think I've seen that Thomas Brodie-Sangster has never read them and he said he has no intention of ever doing so haha.

Michael McElhatton read a few of them at least. He knows about details like Domeric and the leeches (a so-so band name, I'd say) and often refers to them in interviews.
