Five years later and have never never never found out who the actress was who played Jeyne Poole. Just an extra? Don't they credit non speaking roles, well, most the time?

Then Ned wakes up. Also, storyboards show an earlier version of the Tourney of the Hand, including a procession of knights, and Sansa accompanied by her friend Jeyne Poole (who was dropped from the TV series). Plus some very different dialogue between Sansa and Littlefinger, in which Littlefinger tells Sansa she has her mother's hair. Also, in the following episode, we were originally supposed to see Jaime Lannister joust with the Hound.

She was probably just a local teenager like Tommen and Myrcella. No one being able to identify her suggests that she isn't acting in the public eye at all so getting a name would be pretty meaningless.
